Premium sake is classefied Junmai, Junmai-Ginjyo and Junmai-Dai-Ginjyo. Ideally, more you polish the rice, fruity and flowery aroma comes out from center of polished rice and it would be a Fragrant Type . Junmai would be a Rich Type which has more scent of creamy or steamed rice aroma.

About 地酒 Jizake: REGIONAL PREMIUM SAKE FROM JAPAN

Jizake literally means “Regional Sake” often brewed by independent micro-breweries located throughout the rural areas of Japan. Current estimates show 50,000 labels being made by some 2,000 Jizake manufacturers in Japan.

Sake production begins with polishing of the brown rice kernels, slowly and quietly, down to at least 90% its original size. The percentage of the remaining grain greatly affects the flavors as well as determines its final product classification grouping. Rice granules for super premium Dai Ginjo grade Sake are polished down 50% + which requires great care and time.


SMV (sake metered value) is an arbitrary scale which is used to generalize the range in taste from fruity to dry. The lower the value, the denser, and the higher the value, the lighter the density which creates dry tasting Sake.Most of today’s Sake generally range from – 3.0 to + 10, with + 3.0 being neutral.
