About 地酒 Jizake: REGIONAL PREMIUM SAKE FROM JAPAN |
|||||||
|
Jizake literally means “Regional Sake” often brewed by independent micro-breweries located throughout the rural areas of Japan. Current estimates show 50,000 labels being made by some 2,000 Jizake manufacturers in Japan. Sake production begins with polishing of the brown rice kernels, slowly and quietly, down to at least 90% its original size. The percentage of the remaining grain greatly affects the flavors as well as determines its final product classification grouping. Rice granules for super premium Dai Ginjo grade Sake are polished down 50% + which requires great care and time.
